Just another lazy weekend at home and with the awesome rains in UAE, I just felt the need of baking something up. After discovering some left over dried fruit bits in the fridge, I made a batch of simple vanilla cookies and instead of adding chocolate chips as the original recipe I have noted suggests, I added dried fruit bits.
Simple and ready in no time, these are perfect for a last minute baking fantasy.
100 gm butter
100 gm ground sugar
3 tsp of vanilla essense
130 gms dried fruit
1 pinch baking soda
200 gm flour
20 gm icing sugar
Beat butter and sugar until it forms a smooth batter. Beat an egg and add this to the butter/sugar mixture.Stir in vanilla essence.Gradually add flour and baking soda. Add dried fruit bits and mould into a dry batter.
Place the dough in a dry bowl and leave it to set for 30 mins approx. in the fridge. Flatten dough on a dry surface and cut out into desired shapes.
Bake in a pre heated oven at 170 degrees for 20-25 minutes or until golden brown. Leave aside to cool down once ready and dust with icing sugar.
