Valentines Special – Nutella Cupcakes


Valenines day is just around the corner and in the spirit of the lovely day and the recently passed World Nutella Day, here’s a recipe I can recommend to spoil your special someone. This post comes in a week later than the original Nutella day, but what the heck, do we really need just one day to indulge in Nutella? ๐Ÿ™‚

Even if you belong to the singles club (like myself) this is the best recipe to spoil yourself! Hapiness is a Nutella jar!

250gms butter, room temp.
250gms white sugar
250gms cake flour
4 eggs, medium sized
1/2 tsp baking powder
1 tsp vanilla extract
Juice of half a lemon
3 tbsps milk, chilled
Icing sugar, for dusting

In a large mixing bowl, beat butter using a wooden spoon until smooth. Add sugar and continue mixing until the mixture is grainy.

Add eggs to the butter and sugar mixture. Continue stirring until well mixed.

Sift together in another bowl, cake flour and baking powder. In the meantime, preheat oven to 180 degrees C.

Now proceed to add cake flour to the wet mixure, and using a hand held electric mixer, mix together gradually part by part.

Once the flour is added, add to it juice of half a lemon and stir. Then add vanilla essence and milk. Stir until well mixed.

Place batter in cupcake moulds. To each mould or portion of cake batter, add nutella of about a tbsp. Using a skewer stir the batter in each mould so to distribute the nutella.

Place moulds on baking tray and place in the oven. Bake for 25-30 minutes or until risen and baked to golden brown.
Using the skewer test, check if cakes are cooked right through.

After cooling cupcakes, dust with icing sugar.

  1. They look really cute. I hadn’t thought of decorating the top of cup cakes with icing sugar like that. I’ve done some crumble on top, but this is really pretty as a giveaway or just to “pimp my cupcake”…
