Easter Nutella Brownies


Perhaps one of my least planned baking adventures, my next post on Easter Nutella Brownies was an absolute last minute idea as we head close to Easter and gear up for church services over the weekend here in the Uae.

 Nevertheless I decided to give a break to the traditional sweets that we make during this festive time not only cause I am in the mood to giving new desserts a try but also as things at home are getting hectic with my sister’s upcoming wedding being close at hand. The excitement is gearing up in many ways not only with the hapiness that comes with seeing my sister getting close to marital bliss ( and me being Maid of Honor!!! Yay! ) but also on the other end we have just a few weeks more to try out new things in our kitchen like we have all these years, much of course to the annoyance of my mother who says we should be thinking clothes and packing now, rather than cheesecakes and chocolate. But she’s been a great supporter through all this and my ardent fan!

Anyhow, back to my easter baking I have given a go at making fudge brownies. Quick and simple and so easy to make in no time specially if you havent yet decided what to bake this Easter. Accessorised by cute Cadbury mini eggs and a dallop of nutella on the top, these are meant to please everyone! 

1/2 tsp vanilla essence 

2 eggs 

250 gms caster sugar

100 gms butter 

3 tbsp cocoa powder 

100 gms self raising flour, sifted

50 gms pecan, or any nuts (optional)

Nutella for topping 

Cadbury Mini Eggs for decoration 

Firstly, grease an 8 inch square pan or a flat baking tray of your choice. Pre heat oven at 180 degrees C. 

In a mixing bowl, mix together vanilla essence, eggs and caster sugar until well combined and smooth. 

In a non stick sauce pan over low heat, melt butter and cocoa powder until mixture is well combined. Remove from heat and add to egg mixture. 

Fold in flour and nuts and mix together until well combined. Pour batter into greased baking tray and bake in preheated oven for 30-35 minutes. 

Once baked, cool in tin itself. After cooling slice brownies in equal squares. 

To decorate spread a dallop of nutella on the top and place Cadbury’s Mini Eggs over frosting. 

These are simple and quick and just perfect for a last minute baking spree.
